Oatmeal Scotchies

Oatmeal Scotchies

1 cup (2 sticks) margarine or butter, softened
¾ cup granulated sugar
¾ cup firmly packed brown sugar
2 eggs
1 tsp vanilla or 2 tsp grated orange peel
1 ¼  cups all purpose flour
1 tsp baking soda
½ tsp salt (optional)
½ tsp ground cinnamon
3 cups Quaker Qats (quick or old fashioned, uncooked)
1 12 oz package (2 cups) Nestle Toll House butterscotch morsels

Heat oven to 375 degrees. Combine flour, baking soda, salt and cinnamon. Beat margarine, sugars, eggs and vanilla until creamy, then gradually add dry ingredients and mix well. Stir in oats and butterscotch morsels. Drop by level measuring tablespoonfuls onto ungreased cookie sheet. Bake 7 to 8 minutes for a chewy cookie or 9 to 10 minutes for a crisp cookie. Cool 2 minutes on cookie sheet; remove to a wire rack and cool completely.

Yield: about 4 dozen
